Seafood & Technique
Cleaning, cuts, textures, raw preparations and cooking methods built around the ingredient of the day.
SEA · LAND · LAB
The starting point changes with the sea, the season and the ingredient. What never changes is the way we work: close to the source, hands-on, and around the table.
Our signature experience. The day begins with the sea and continues long after the catch.
We fish with a sporting approach, read the conditions, handle the catch with respect and bring it back into the kitchen. Technique, cleaning, preparation and cooking are part of the same story — not separate activities joined together.
Wind, current, light, depth and movement decide how the day unfolds. Fishing is not simply the moment the rod bends: it is attention, reading and choosing the right technique for what the sea is giving us.
When the rod bends, the sea becomes immediate.
Technique becomes physical. The line, the reel, the movement of the boat and the fish all enter the same moment. The goal is not spectacle — it is to work well, stay present and respect the catch.
The fish is not the trophy at the end of the day. It is the ingredient that begins the next part of the experience.
Cleaning, filleting, cuts and texture reveal what the catch can become. This is where fishing stops being an activity and becomes knowledge.
We bring the fish back to the Lab, work with it, cook it and finish the experience around the table. The value is not simply in catching something — it is in understanding everything that comes after.
Sometimes the ingredient is not waiting in the kitchen. We go and meet it where it comes from.
A seasonal experience built around Sardinia's producers, landscapes and raw materials. It may begin with mushrooms and foraging, a vineyard, cheese, olive oil, cured meats or another small production worth knowing — then return to the Lab and the table.
Not a tour of products. A way of understanding where flavour begins.
A landscape becomes meaningful when you meet what grows there, who makes it and why it tastes the way it does. The route is never identical: season and availability decide what is worth discovering.
The interesting part is not simply tasting a product. It is entering the place where it is made, seeing time and technique at work, asking questions and understanding the choices behind it.
What we find outside comes back with us. We taste it, work with it, connect it to other ingredients and let the day continue in the kitchen and around the table.
No sea required. The ingredient is already here — and the work begins with our hands.
Cooking Lab is not one fixed class. It is a collection of hands-on paths shaped by season, territory and the ingredients worth working with that day. Fish may be part of it, but it is only one language among many.
The Lab can move from seafood to fresh pasta, from meat to vegetables, from raw preparations to fire, preservation and slow transformations. What holds everything together is not a category of food — it is the relationship between ingredient, season and territory.
Cleaning, cuts, textures, raw preparations and cooking methods built around the ingredient of the day.
Dough, filling, shape and gesture — including stamped forms inspired by the island's visual language.
Cuts, cooking, resting, carving and the relationship between local meat, fire and season.
Technique is not decoration. It is a way of understanding the ingredient better.
Marinating, curing, drying, preserving, fermenting or simply waiting: transformation changes flavour, texture and time. These techniques allow the Lab to follow Sardinia beyond the obvious and beyond the season of a single ingredient.
There is no rigid menu and no standard lesson. The experience follows what is good now, what the territory offers and what is worth learning together — then ends where every path in FCL ends: around the table.
Sardinia sets the rhythm. When conditions are right, we begin at sea. When they are not, we can begin on land or in the Lab. The experience is shaped around what the day can genuinely offer — never forced into a fixed programme.
Today we begin where the ingredient begins.
